HOCHO SANTOKU - European Style
The TADAFUSA HOCHO SANTOKU is one of our most popular Japanese Chef knives due to it's versatility and honesty. With the razor-sharp edges you’ll easily achieve super-skinny slices of onions, tomatoes and other diced vegetables. Loved by chef's for it's balance and flexibility, the Santoku is also great for peeling pumpkins as it flexes around curves for precision and control.

Hand forged, this range is offered in triple layered blades of rust-resistant SLD steel (HRC of 60) and clad with soft stainless steel. This acts as a blanket and protects the harder steel in the core from breaking or shattering in to pieces. These knives come with heat treated semi-charcoaled chestnut wood handles for moisture and bacteria resistance, and the core steel offers a sharp blade which holds its edge.

Mirai-Me Smooth Cutting
The teeth of the future! Silky blades have precision ground razor sharp teeth, with 4 cutting angles along their length. They leave an especially smooth surface after cutting and are ideal for pruning, greatly reducing the risk of infection. They can rip-cut, cross-cut and slant-cut. |

Typically, this saw will be for use in forestry or heavy-duty arborist work. The teeth configuration will range between 3 and 7 teeth per 30mm and will give a very aggressive cut. In general you will be surprised by the smoothness of the cut. |

Large Teeth A saw with large teeth will be ideal for use in heavy/medium pruning tasks, root cutting, and construction. The number of teeth will range between 7 and 8 teeth per 30mm. An aggressive and smooth cut will be achieved. |

HOCHO BREAD SLICER - European Style
The TADAFUSA HOCHO BREAD SLICER is unique in that it has a small serrated area at the tip for establishing the cut and the rest of the blade is un-serrated. Fantastic for soft or crusty bread and sashimi.
The Bread Slicer is not only fantastic for bread, it's also great for cutting products with tough skin like sausages and tomatoes

BOCHO AJIKIRI - Japanese Style
The TADAFUSA BOCHO AJIKIRI is a paring knife excellent for tasks that require delicate slicing and a lot of dexterity. This utility knife will always come in handy when you need to slice up small pieces of vegetables, and fruit. At 10.5cm long the blade is shorter but deeper than the Petty with good finger clearance, depending on your personal preference.
The Ajikiri is a small kitchen knife designed for mincing, fine chopping, and peeling
Japanese style: From the traditional Japanese range of hand forged blue carbon steel knives by Tadafusa, the carbon core of these knives is sandwiched between two layers of blue carbon steel that have been left with a rustic or nashiji (pear skin) finish. This helps prevent food from sticking to the blade when slicing items (and also offers a unique look). The carbon steel blades hold a keen edge and are exceptionally sharp and are deliberately left unfinished as the imperfections reduce suction, allowing food to fall freely from the blade. It also allows the knife to cut with less resistance. The handles are crafted from burnt chestnut wood with a plastic ferrule. This wood is moisture resistant and also resistant to bacteria. .

BOCHO PETTY - Japanese Style
The TADAFUSA BOCHO PETTY is a small knife and perfect for vegetables and fruit, garlic, oinions and herbs. Our friendly Nelson Chef Matt Bouterey also recommends it for kids as quality sharp knives are "more honest & reliable". We'll let you judge that - but this is a must have in your kitchen for any serious home chef (or professional).

The teeth of the future! Silky blades have precision ground razor sharp teeth, with 4 cutting angles along their length. They leave an especially smooth surface after cutting and are ideal for pruning, greatly reducing the risk of infection. They can rip-cut, cross-cut and slant-cut. |

BOCHO GYUTO - Japanese Style
The TADAFUSA BOCHO GYUTO is a multi purpose knife with meat cutting bias. Gyuto translates to 'cow sword' and is commonly referred to as the butchers knife. A great choice for the at-home or professional chef or cook.

Japanese style: From the traditional Japanese range of hand forged blue carbon steel knives by Tadafusa, the carbon core of these knives is sandwiched between two layers of blue carbon steel that have been left with a rustic or nashiji (pear skin) finish. This helps prevent food from sticking to the blade when slicing items (and also offers a unique look). The carbon steel blades hold a keen edge and are exceptionally sharp and are deliberately left unfinished as the imperfections reduce suction, allowing food to fall freely from the blade. It also allows the knife to cut with less resistance. The handles are crafted from burnt chestnut wood with a plastic ferrule. This wood is moisture resistant and also resistant to bacteria. .

This 72ml bottle of 100% PURE CAMELLIA OIL is made in Japan by Kurobara, and is cold pressed by a raw squeezing method of the wild harvested seeds of the Camellia tree flower. Cold pressing is a labour-intensive mechanical process that ensures the maximum possible amount of the oil's character and nutritional content is preserved.

100% pure camellia oil is an Emollient (something that softens skin and hair) and approximately 82% of its fatty acids are composed of Oleic Acid (Omega 9). Anti-Acne
As camellia oil only has a comedogenic rating of 1, it’s unlikely to cause acne or make acne prone skin worse. Its anti-inflammatory properties may help soothe inflammation caused by acne, including red and sore skin. Many people with acne have less linoleic acid in their skin. As this is a component of camellia oil, applying it can top up the levels of linoleic acid. And by doing so, acne is less likely to appear.
Overall Body Oil

KNIFE SHARPENING GUIDE
High quality knives should always be sharpened on stones, and if sharpened correctly you should have a consistent bevel along the length of the blade. Holding this bevel is the most important and difficult part of knife sharpening, and here's why the TOGERU KNIFE SHARPENING GUIDE is so good.
The sharpening guide is a clip that snaps on to the back of your knife so you can work at a constant angle (15°).
The guide works with great success on knives from approx. 10cm to 20cm in length, but it can be used on longer knives if you move the guide along the blade (or use more than one guide). The clip is made of plastic so that it doesn't scratch the knife, and the part that runs along the sharpening stone is a very smooth hard ceramic material that won't wear easily or gouge a hollow in your stone.

Precautions:
- Be careful not to cut yourself when sharpening your knife
- When you are placing pressure during sharpening, keep your fingers away from the cutting edge of your knife
