    The TADAFUSA BOCHO SANTOKU is one 
    of our most popular Japanese Chef knives due to its versatility and honesty. With the razor-sharp edges you'll easily achieve super-skinny slices of onions, tomatoes and other diced vegetables. According to our favourite chef's these knives have fantastic balance and are easy to work with all day long.

    The Santoku is a larger knife great for slicing, dicing, and chopping.

    Japanese style: From the traditional Japanese range of hand forged blue carbon steel knives by Tadafusa, the carbon core of these knives is sandwiched between two layers of blue carbon steel that have been left with a rustic or nashiji (pear skin) finish. This helps prevent food from sticking to the blade when slicing items (and also offers a unique look). The carbon steel blades hold a keen edge and are exceptionally sharp and are deliberately left unfinished as the imperfections reduce suction, allowing food to fall freely from the blade. It also allows the knife to cut with less resistance. The handles are crafted from Magnolia and Bubinga wood and have a plastic ferrule. This wood is moisture resistant and also resistant to bacteria.

Really good knife

I really like the feel of the knife for doing vegetables or dicing meats like chicken breast. The blade design allows me to cut straight, deep and clean. It remains nicely sharp for many weeks at a time, unlike my western knives. It is not for carving or anything that requires twisting or following contours and the edge can get a bit bent if you push hard on bones (my bad). I use it a number of times a day and would highly recommend having one in the knife block.

Fascinatingly good, highly recommended.

I've had the knife for about 6 months now. I use it a number of times a day and really like it. I enjoy cooking and have a collection of fine German knives, some of which I have had for nearly 40 years. This knife was a bit of an impromptu shift into something different. It feels different and behaves differently. It is beautifully sharp, keeps its edge really well and has a curiously straight way of cutting. A really nice knife for slicing and dicing of both meat and vegetables where you want fast, deep, straight, clean cuts. I bought my brother one for Christmas and he likes it the way I do.
